今天,我就用6元买的半只鸭,跟大家分享一道五味鸭!五味鸭是广东很出名的一道菜,看它名字或许会觉得复杂,其实做法很简单!就是用客家娘酒、片糖、米醋、生抽和柱候酱这五种调味料煮制而成,非一起来看看是怎么做的吧!用料:鸭子半片,客家娘酒,片糖,生抽,米醋,柱候酱,水,葱,姜。

做法:先处理一下鸭毛,拔掉鸭子表面的碎毛,把鸭肚子里面没有清除干净的部位,也一并摘除干净,再用清水把鸭肉清洗干净。

锅子烧热,放入鸭肉,不断地翻动,开中火烙鸭肉,把鸭肉表皮烙至发黄微焦,即可关火出锅。

(鸭肉表皮内的油脂很丰富,我用的是不粘锅,所以没有再放油。

如果你用的是普通锅,就需要加一点油哦。

)取一大碗,倒入四勺客家娘酒,3勺生抽,2勺米醋,30g糖片(我们家没有糖片,就用了冰糖代替),1勺柱候酱,搅拌均匀。

锅内留底油,放入姜片炒香,把刚才的半片鸭子再放入锅内,倒入调好的料汁,再加入漫过鸭子量的水,放入一个葱结,盖上锅盖,大火烧开后转小火焖煮。

煮到锅内汤汁不多,且鸭肉能用筷子扎透,没有血水往外流,就可以出锅了。

将鸭肉斩成小块,淋上汤汁,一盘五味鸭就做好了。
